Tuvo la suerte de ser guiado en sus comienzos por M\u00e1ximo Cabrera y al poco tiempo fundar V\u00e4cka, una marca de contenidos gastron\u00f3micos y f\u00e1brica de quesos veganos. Esa necesidad de volver a los sabores de la infancia le motiv\u00f3 a investigar nuevas t\u00e9cnicas culinarias y a experimentar cambiando los sustratos de origen animal por otros basados en semillas, frutos secos, cereales o legumbres.
